Kauai has been amazing so far!! I am in awe of the lushness of this place, all the natural beauty, and how at home I feel so far from home! 

Being so far from the mainland, food prices can get pretty high out here when you don't make wise choices. It is necessary to shop local here. I hit my first market two days ago and picked up a huge haul of fresh greens, herbs, fruits, and veggies for the week for only 40 bucks!! Plant based on a budget? I think yes. 

In my efforts to live a whole foods, plant-based way of living, I have to get creative with my recipes! This means no food wasted. There is ALWAYS a use for any leftovers, and I try to use the entire food if possible (skin, peel, flesh, juice, pulp, etc.)

This papaya seed dressing is definitely an interesting taste, and very peppery as the seeds by themselves hold this taste profile. 

This recipe is perfect for salads, as a dip with some chips, as a meat/fish marinade, sandwich spread, get creative! Im trying to get out to the beach ASAP, so heres the dressing recipe let me know what you think!   

Sweetie papaya-seed dressing:

Seeds of one small papaya (about a cup)
3 dates (soaked)
1/4 cup avocado oil
1/4 cup balsamic vinegar
1/4 lemon (skin peeled off)
1 inch piece of ginger

Blend all ingredients in a high powered blender for about 2 minutes, until nice and creamy. Store in a glass, air-tight container. Stays fresh for up to one week.
